  • Take a step back, pumpkin. I don’t plan to to stop eating watermelon any time soon. • Another preschool parent sliced up a watermelon for grown-up volunteers last week and I single handedly ate half in an hour (it helped that my art station was conveniently located just half a step away from the watermelon platter). • If you want to easily dress up your watermelon for entertaining - top slices with grand cru or gruyere, roasted almonds, and char it under the broiler. Homemade pizza night is our new weekly tradition this summer and I’ve been using the time to perfect my gluten-free pizza crust. For all my tweaks, the major game-changer has been cooking in a wood-fired pizza oven. This gluten-free crust is unbelievably crisp on the bottom with classic air bubbles with a chewy edge you actually want to eat! I’ll keep fine-tuning the method and share the recipe soon!   • Zo started preschool this week so now we’re officially a household that cares about back to school season. In partnership with @OXO (ad), I used the same base recipe for two different gluten-free muffins to make our mornings that much quicker (and tastier). I’m making these muffins in my stories today and showing a peek into how I stock and organize my gluten-free baking ingredients with OXO POP Containers in my IG stories! • I get a lot of questions about how to take the plunge into gluten-free baking – it seems daunting and overwhelming to buy multiple flours for a single recipe. Plus how do you store them all?! Here’s my tip: start by stocking your kitchen with 4-5 base gluten-free flours that will work for many different recipes. Since you use 2-3 flours per recipe, the flours stretch a lot further than a bag of AP flour. Store these flours in OXO’s stackable airtight pop containers to keep them fresh and organized. You’ll easily be able to find what you need and tell when you’re running low. As you get more into gluten-free baking, stack on more pop containers with unique flours that bring different flavors to your baking. • These gluten-free blueberry muffins and cinnamon oat streusel muffins use three of my most used gluten-free flours. GF Blueberry Muffins
5 muffins
•
INGREDIENTS
¼ cup whole milk
½ tsp white vinegar
¼ cup unsalted butter, melted, plus more for pan
2 Tbs honey
1 large egg
1 tsp vanilla extract
50g sweet rice flour
60g oat flour
48g millet flour
2 Tbs sugar
¾ tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup blueberries
1-2 Tbs coarse sugar

INSTRUCTIONS
Preheat oven to 350°F & butter 5 cups of an @oxo non-stick muffin pan w/ softened butter.
Mix milk & vinegar and let sit for 5 min. Melt butter & whisk in honey. Sift dry ingredients together. Mix in blueberries, reserving some for top. 
Whisk egg & vanilla into milk, then add to dry ingredients. Add butter & honey. Mix. Divide evenly into prepared pan. Top w/ more blueberries & coarse sugar.
Bake 24-26 mins, until a toothpick comes out clean. Let cool in the pan for 5 mins before removing.
