All gluten-free recipes that use almond flour. Almond flour is my go-to flour base for cookies and bars, as it has a neutral taste that enhances the other flavors. It also works beautifully in muffins and bars. The flavor of almonds doesn't overwhelm the crumb, instead, finely ground almond flour gives a hint of sweet nuttiness with the classic flavor of freshly baked cookies or cake.
Almond flour also adds moisture, protein, and fat to baked goods, which means you need more flour than traditional recipes to keep cookies from spreading or cakes from being too dense.
