Gluten-free Kabocha Empanadas with Gruyère & Thyme

Kabocha Empanadas with Gruyère & Thyme {Gluten-free}

Last updated on April 8th, 2019 It’s really tough to edit photos and write about food as tantalizing as these empanadas while in the middle of fasting for a glucose test in the morning. Talk about torture. The clinic instructions prompted me to have snacks ready for when the test was over, so naturally I’ve prepped the dough and…

Butternut Squash Deviled Eggs with Bacon

Butternut Squash & Bacon Deviled Eggs

Last updated on April 8th, 2019 Howdy from Texas! We’re in Austin/San Antonio for a quick trip to visit Lucas’s family and are currently on our last day of binge-eating Mexican food and allofthemeat. We warmed up for our trip by snacking on these spicy butternut squash deviled eggs topped with crispy bacon.

Last updated on April 8th, 2019 For years we’ve talked about houses as though we could actually buy them. “We’d totally knock down this wall” or “we’d change the counter tops first thing.” Just dreaming, of course, but we could spend hours visually remodeling a house (and we have for our current rental). Finally these daydreams…

Heirloom Tomato and Bell Pepper Gazpacho

Heirloom Tomato and Bell Pepper Gazpacho

Last updated on April 8th, 2019 Oh hai there. Remember me? Yeah, probably not. I made this end-of-summer heirloom tomato and bell pepper gazpacho almost two weeks ago to match up with our lil’ baby’s size, but then my best friend was getting married and I spent a full week using all of my creative juices mulling…

Last updated on April 8th, 2019 Do you love cheese as much as I do? Did you wake up at 3am to make nachos the other night too? No? Just me then? Hm. Anytime you want to stop by at 3am to wake me up for a nacho-fest, I’m totally in. I know I’m supposed to be…

Mexican Street Corn Grilled Polenta Bites

Last updated on April 8th, 2019 Last Saturday was one long celebration of Lucas’s birthday (though his actual birthday is today!). We meant to get up early to spend the full day at food festivals, but in true Sarah-Lucas form, we slept in (shocker). We’re the kind of people who set three alarms – 7:00,…

Black Sesame and Wild Rice Crackers - Gluten-free

Black Sesame and Wild Rice Crackers {Gluten-free}

Last updated on May 11th, 2019 I made a cup of rice in the rice cooker a few nights back and forgot about it. Overnight! As in, I didn’t eat any of it and it wasn’t until the next morning that I remembered I’d put rice in the cooker. I started the rice, then planned to…

GF Scallion Pancakes

Gluten-free Scallion Pancakes

Last updated on April 8th, 2019 Sometimes a recipe idea pops in my head seemingly from nowhere at all (the recipe gods?). Take these gluten-free scallion pancakes, for example. I’d never eaten a scallion pancake. Not once in my whole life. In fact, I’m not even sure I’d ever even seen a picture of scallion pancakes…

Pistachio Basil Ricotta Spread with Honey

Last updated on April 8th, 2019 There’s an insane amount of cheese in our fridge right now (best problem to have). Last week Lucas came home with teeny tiny half-wheel of fancy cheese and a box of crackers he’d picked up at the market on his way home from work. In our marriage, this gesture…

Halloween Jack Skellington Ricotta Olive Tarts

Last updated on April 8th, 2019 Halloween struts in at just the right time. With some sort of time warp, it’s magically the end of October and I’m on the brink of losing my mind. Anyone else with me? I poured a scoop of cat food into the detergent slot of the washing machine at…

Texas BBQ pulled pork quesadillas with vinegar slaw

Last updated on April 8th, 2019 The neighbors got suspicious when they peered through the fence and noticed Lucas and Mikey digging a 4-foot deep 3×5-foot pit in our backyard. By offering an invitation, I assured them that we were planning to roast a pig, not bury a body. For my last 20-something birthday, we invited all our…

Baked white bean and artichoke dip

Last updated on April 16th, 2019 We should probably go pick up some lottery tickets. At least the low-investment scratch-off kind. You see, we’re on a winning streak. How’d you get so lucky? I don’t have an answer for that, so I’ll just brag about it instead. Our good fortune extends beyond how lucky I feel that I got to…

Zucchini arepas: zucchini corn cakes with cheese, salsa, and guacamole

Last updated on April 8th, 2019 When I first went off to college, I’d regularly call my mom from the grocery store to ask, “in what part of the store would I find _____ ?” Anything from salsa to olives to pizza sauce. For me, this was the adult manifestation of watching my parents drive from one place to the next without…

DIY Bacon gifts: bacon jam, bacon salt, and bacon candy

Last updated on April 8th, 2019 Back in January, my friend Tina kicked off the new year with a resolution about healthy eating. I kicked it off by infusing bacon into everything. And then waited 4 months to tell you about it – until it was safe to say that most New Year’s resolutions had…

Coca Cola pulled chicken sliders

Last updated on April 8th, 2019 Since we’re back in the US now, I thought I’d share a recipe that screams “America!” And what’s more American than Coca Cola, amiright? Really, I made these sliders the week before we left, but I’ve been saving the recipe. To be honest, besides my fresh fruit breakfasts, I hardly…

Spinach artichoke dip stuffed mushrooms

Last updated on April 10th, 2019 Despite attending two Pac 10 schools, I have very little interest in March Madness. I feel pretty much the same about it as I do about the Superbowl. • {New!} If you search “soft pretzels” online, you get a bunch of hits that describe the recipe “as good as mall pretzels.” These homemade gluten-free soft pretzels are not “as good as mall pretzels” - they’re WAY BETTER. Made in partnership with @BobsRedMill (ad) using a combination of gluten-free oat flour, sorghum flour, tapioca starch, and corn starch, they’re so soft and fluffy inside with a classic salted chewy browned shell outside. These are the real deal - you’d never believe they’re gluten-free! Get the recipe link in my profile! #BetterwithBobs #BakedwithBobs #BobsRedMill

  • Baking pumpkin cake while our roofing gets ripped off right above me. Specifically lofty and super moist gluten-free pumpkin cake with salted caramel cheesecake frosting. It’s loud - the roof destruction. (They may also be bowling with elephants up there, I think.) The cake on the other hand is warm and comforting. Get the recipe link in my profile!

  • I was in charge of bringing snack for the 20 preschoolers at Zoella’s school last week. No, I did not sugar them up with this German apple cake. I DID, however, panic about how much snack to bring and bought 20 apples...and 4lbs of baby carrots...and 2 tubs of yogurt...annnnd baked 60 tahini banana muffins. As if there was even a chance, they didn’t eat that much. Not even HALF that much. So now I’ve got 15 apples in my fruit bowl and the only logical thing to do is make gluten-free German apple cake. Who wants a slice? Recipe link in profile!

  • Confession: I bake to avoid real life responsibilities. These are my favorite gluten-free vanilla cupcakes - decorated with brûléed figs (because fig season is here!!!) • Hope you have a wonderful responsibility-free weekend! We’ve got plans to move the back of our house into the front of our house in preparation for ripping open the back of the house for the addition next week! Hence, cupcakes instead of packing...maybe wine too... • Recipe link in profile!

  • {New} Vegan gluten-free chocolate chip cookies. Chewy centers with crisp edges - they taste neither vegan nor gluten-free. These are some of the BEST chocolate chip cookies I’ve had and that’s coming from someone who eats full butter/egg cookies almost nightly. Teff flour and olive oil combine to make a cookie thats layered and flavorful, somehow subbing in for the missing butter. Maybe there’s magic involved? Give them a shot and you decide! • {New} Mini healthy stovetop gluten-free berry crisps topped with crispy cinnamon breadcrumbs and oats (with vegan option) – made in partnership with @littlenorthernbakehouse (ad). With no refined sugar, these berry crisps make the perfect easy after school snack. Using their millet & chia sliced gluten-free loaf, the crumble on top takes 10 minutes and tastes exactly like cinnamon toast. I love using their nutrient-rich sliced breads to make recipes because they have a chewy texture like real bread and I feel good about the ingredients! When I first served these up, Zoella thought she was sneaking dessert before dinner then told me, “Mommy, you make the best food in the whole world!” I’ll take it, kid! •

  • Take a step back, pumpkin. I don’t plan to to stop eating watermelon any time soon. • Another preschool parent sliced up a watermelon for grown-up volunteers last week and I single handedly ate half in an hour (it helped that my art station was conveniently located just half a step away from the watermelon platter). • If you want to easily dress up your watermelon for entertaining - top slices with grand cru or gruyere, roasted almonds, and char it under the broiler. With a bit of mint and flaky salt, it’s sweet, salty, and summery. Get the recipe on the blog - link in profile! #watermelon
